Overview

Performs a variety of Food Service duties as assigned with responsibility to maintain orderliness and sanitation, properly handle food using established techniques, ensuring safety and sanitation. Notify Supervisor or other Dietary Worker as necessary for repairs or problems and maintain standards and follow procedures. Transport food and/or equipment as needed.

Responsibilities

The following are areas within the Dietary Workers responsibility. Duties will vary based on assignment.

Salad Maker

  • Prepares salad plates according to production requirements.
  • Labels salad plates with patient’s’ names or diet labels.
  • Prepares special requests for patients specified by “short order” sheet.
  • Cuts and apportions cold cuts.
  • Prepares sandwiches as required.

Dessert Maker

  • Prepares and portions food.
  • Covers, dates, labels, and stores these items.

Tube Feeder

  • Prepares enteral feedings for patients according to directions listed on packaging and monitors concentration of the formula on the order sheet.
  • Labels tube feeding containers with date, patient name, and bed location.
  • Stores prepared tube feedings in appropriate refrigerator as needed.
  • Labels commercially prepared tube feedings and supplementary feedings. Stores them properly.

Special Functions Worker

  • Receives “special function requisition” from Kitchen Supervisor and carries out instructions.
  • Obtains food and non-food items from Dry Goods storeroom.
  • Prepares and garnishes cold food items.
  • Delivers prepared items to appropriate area and sets up attractively.
  • Returns unused food, non-food items, and equipment to kitchen and properly stores or discards these items as appropriate.

Evening Nourishment Worker

  • Obtains food and non-food items from Dry Goods storeroom.
  • Sets up trucks with bulk food to be delivered to patient care areas.
  • Returns unused food and non-food items to proper storage areas.

Oven Worker

  • Heats food plates that have been assembled for patients in the 3-M ovens.
  • Tests heating elements in plates regularly to ensure that they are working properly.
  • Works in other areas of the Department as needed.

Pot Washer

  • Sets up, washes, rinses, and sanitizes sink in meat and Dairy Pot rooms.
  • Manually washes and processes pots, pans, and utensils according to procedures posted in the pot washing areas.
  • Stacks pots and pans upside down and on their sides to drain.
  • Stores, clean, dries pots in the proper storage area and ensures that this area is locked.
  • Cleans sinks, counter tops, and racks. Sweeps and mops floors in both Pot rooms.
  • Notifies Supervisor of damaged pots and pans as well as malfunctioning dispensing equipment (cleansers and sanitizing agents).

Kettles and Oven Worker

  • Washes, rinses, sanitizes food production equipment and counters in the Cook’s’ area.
  • Sweeps and mops floor and cleans floor drains in Cook’s area.
  • May be assigned to Pot or Dish rooms in the evening if needed.

Dish Room Worker

  • Removes spoiled trays from trucks and strips them. Food and paper goods are placed in dish machine.
  • Pre-soaks dishes to be washed to remove encrusted food.
  • Loads or unloads dishwasher depending upon assignment.
  • Places all clean trays and dishes in proper storage carts and delivers them to appropriate areas.
  • Cleans food delivery trucks after soiled trays are removed and before they are returned to the CTS line.
  • Drains and cleans dish machine as assigned.
  • Cleans the Somat auger after each meal, and cleans the entire Unit at the end of each day.
  • Sweeps and washes floor and cleans floor drains in Dish room.

Garbage Worker

  • Collects full garbage bags from all areas of the kitchen and transports them to designated area.
  • Washes and rinses garbage bins. Relines trash cans with plastic bags and covers cans.
  • May be assigned to work in the Dish or Pot rooms in the evening.

Cafeteria Workers

  • Sets up cafeteria serving area for brakfast and lunch service.
  • Portion and covers food items. Prepares sandwiches.
  • Displays food attractively, replenishing as needed.
  • Serves food during meal service.
  • Fills condiments and silverware racks as needed.
  • Bags garbage and transports to designated area.
  • Removed soiled trays.
  • Buses and cleans tables and wipes up spills in timely manner.
  • Returns serving utensils to Supervisor.
  • Cleans work area during and after meal service.
  • Returns serving utensils to Supervisor to be secured overnight

Central Tray Line Worker

  • Sets up station with proper food items.
  • Places foods on plates per menu requirements using proper serving utensils.
  • Completes trays with all designated items as indicated on menu.
  • Returns unused food to appropriate storage areas.
  • Cleans workstation after meals.
  • Sets up main entree in aluminum container for Meals on Wheels.

Pantry Worker

  • Checks tray for accuracy.
  • Heats main entree plates in 3-M ovens or 3-M trucks.
  • Delivers completed trays to patients.
  • Refills waster pitchers and distributes ice.
  • Prepares pantry supply requisition for the dry goods storeroom and delivers to that area.
  • Heads, distributes, and collects menus from patients.
  • Removes soiled trays from patient rooms and places them on food delivery truck to be returned to the kitchen for cleaning.
  • Cleans pantry and equipment as assigned.
  • Late pantry workers are assigned to the Dishroom after work in pantries have been completed.

Floor Worker

  • Sweeps and mops floors in the main Kitchen, walk-in refrigerators, and freezers.
  • Follows procedure for proper maintenance of floors.
  • Maintains cleanliness of mops, pails, carts, and other equipment related to floor maintenance.

Elevator Person

  • Places hotel pans with soup on top of trucks for delivery to pantries.
  • Transports food delivery trucks to appropriate patient care Units via the elevator.
  • Returns trucks with soiled trays to the dish room for sanitizing.
  • Works in other areas of the Department as assigned.

Storeroom Worker

  • Stores food and non-food items according to established procedures.
  • Fills requisitions.
  • Dates produce, dairy, prepared foods, freezer items, meats, etc., prior to storage. Supplies are to be used on a first in, first out basis.
  • Informs Supervisor of any problems related to deliveries and equipment malfunctions.
  • Maintains the sanitary conditions of all food and non-food storage areas.

Tray Passer

  • Completes breakfast trays for hemodialysis, placing rolls, utensils, and juice on trays.
  • Checks all completed trays for 2s, 2k, 3s, 3k and hemodialysis for accuracy. Delivers these trays to the appropriate areas.
  • Late tray passers are responsible for working in the dish room after the dinner meal is processed.

All functions perform other duties requested.

Qualifications

Education:

  • High School Diploma or GED preferred.

Experience:

  • Previous experience in Food Services preferred.
  • Previous Customer Service experience preferred.

Knowledge and Skills:

  • Ability to read, write, and follow instructions in English.

Physical Requirements :

  • Position requires prolonged periods of standing, reaching, walking throughout the working day.
  • Position will be required to stoop, bend, lift and carry items weighing up to 25 pounds.
