Essential duties include but are not limited to: Serve meals that are palatable and appetizing in appearance. Assist in serving meals as necessary and on a timely basis. Serve food in accordance with established portion control procedures. Assist in daily or scheduled cleaning duties. Comply with all duties assigned as per the cleaning schedule in a thorough manner. Clean and sanitize work tables, meat blocks, and refrigerators/freezers as per routine schedule and as needed. Sweep and mop floors as directed. Carry soiled utensils, etc., to wash area; wash and clean utensils and return clean utensils to proper storage areas. Carry out garbage and keep work areas clean, dry and free of hazardous equipment, utensils, supplies etc. Set up meal trays, food carts and the dining room etc., as directed. Assist cook in preparing meals. Assist with serving line duties. Distribute and collect menus as directed. Obtain food products for the next meal from storage areas. Assist in preparing trays and in checking diet trays before distribution. Assure that the correct beverages, condiments, and tray set up is performed to meet each residents diet ordered. Deliver food carts, trays etc to designated areas promptly. Assure that foods that are not in a cart are covered correctly before leaving the kitchen. Serve food in the dining room as instructed. Bus and clean tables in the dining room and collect trays and dishes etc. after the completion of meals. Complete the specific duties for the assigned tour of duty (am, pm etc.) Perform dishwashing/cleaning procedures. Perform drying and storage of all dishes, utensils etc to meet sanitization requirements. Assure that utensils, etc., are readily available for the next meal. Remove trays from carts, dining rooms, etc., and take to the dishwashing areas. Store carts in the designated areas. Prepare and deliver snacks as directed, promptly. Communicate with the nursing staff appropriately to promote an effective and nourishing snack program. Assist in stocking shelves and organizing the kitchen. Assist in preparing, covering and labeling of food items. Assist in the proper care, use and cleaning of kitchen equipment. Prepare food in accordance with sanitary requirements as well as with the facility established policies and procedures. Dispose of food and waste in accordance with established policies. Inspect all equipment for proper function and potential safety hazards when utilized and report any problems or needed repairs promptly. Use the established safety precautions when equipment is used. Use hazardous chemicals carefully as directed. Assist with proper labeling and proper storage. Report missing or illegible labels or material safety data sheets (MSDS) to the supervisor. Report all hazardous condition/equipment promptly to the supervisor. Comply with all hazardous or exposure control procedures and utilize the correct personal protective equipment measures as indicated. Assist in maintaining neat and organized food storage rooms, utility /janitorial closets etc. Maintain kitchen and dietary areas in a sanitary appearance by performing established practices. Report any health concerns regarding infections or communicable diseases. Follow facility protocol if concerns are noted. Assist in maintaining the menu substitution list as directed. Post menus in designated areas in the facility as directed. Assist in preparing and the delivery of employee and guest meals. Assist with special activity events and provide the requested food for same in a creative and appealing manner befitting the occasion. Follow up on resident requests or concerns promptly. Assist and participate in accommodating resident food likes and dislikes. Be respectful of residents rights and confidentiality. Utilize reference material such as manuals, memos and policies and procedures to assure correct task completion. Maintain a cooperative working relationship with other department staff to assure that daily dietary services can be performed without interruption. Attend and participate in in-service training or continuing education to meet standards of food service operations. Attend in-service training classes to provide the necessary instructions to meet department productivity and compliance requirements. Comply with emergency response actions to kitchen emergencies. Utilize food products, supplies and equipment in a cost efficient and effective manner to support the dietary department budget objectives. Abide by work schedules and avoid excessive absenteeism and tardy occurrences. Report to work in clean and neat attire / uniform as directed. Perform any other duties as assigned.
