DELEGATION OF AUTHORITY Authority is delegated to the individual in this position to: Implement dietary, housekeeping, and laundry service policies and procedures to meet residents’ needs and in compliance with federal, state and local requirements. Determine the personnel requirements for the dietary, housekeeping, and laundry departments to make recommendations for sufficient staff to implement dietary, housekeeping, and laundry service policies and procedures. Inspect resident care, public, and departmental cleanliness , identify, and correct problems with sanitation. 5. Maintains the Material Safety Data Sheets for the dietary, housekeeping and laundry departments. 6. Plan and implement diets and menus for review by the consultant. Plan food substitutions with dietitian for residents who refuse or are unable to eat food served. 7. Assures that foods are prepared according to current production schedules, menus, and recipes. Monitors, identifies, and corrects over production of food to avoid waste. 8. Inspects meals and assures that standards for appearance, palatability, temperature, and serving times are met. 9. Coordinates with the hospital and senior center to prepare and transport palatable meals that meet regulatory requirements of those facilities. 10. Establish and maintain efficient inventory levels. Purchase or requisition food and supplies. 11. Supervise the receiving and storage of food and supplies to ensure items received are checked against invoice and items are of good condition and quality. 12. Complete the assigned MDS section(s) in a timely manner. 13. Review residents’ dietary profile, dietary needs and preferences, weight, assessment plan and plan of care related to nutritional status and eating function to determine if there is a problem or concern that can be resolved, improved or addressed in a different manner to improve the resident’s nutritional status and eating function. 14. Create, review, revise and implement the dietary component of residents’ assessments and care plans and document each resident’s progress toward care plan goals. 15. Inform and educate residents regarding therapeutic diets. 16. Maintain records of residents’ profiles, meal census, menus, diet roster, and purchase records. 17. Supervises and coordinates activities including work routines and schedules and selects, hire, develops, evaluates, disciplines, and terminates employees in compliance with personnel policies. 18. Plan and conduct in-service training programs for staff. 19. Implement dietary policies and procedures and food service job descriptions. 20. Assume responsibility for compliance with kitchen sanitation requirements and prepare cleaning schedules. 21. Ensure proper maintenance of dietary, housekeeping, and laundry equipment. 22. Maintain food and labor costs within the dietary budget. Maintain housekeeping and laundry supplies and labor costs within the housekeeping budget. 23. Work with Administration and the Activity Department to plan menus and provide special foods for parties and/or other scheduled programs. Assure special housekeeping, decorating and food is planned for, ordered, or rented within budgetary constraints. 24. Attend and participate in the Quality Assurance Meetings and assume Quality Assurance duties as assigned. 25. Perform other related duties as directed by the Administrator. 26.
