Summary: This position plans, organizes and directs all activities and systems in the dietary service department including budget development and compliance; sanitation; safety; regulatory compliance; menu development; preparation and service of food and staff development. This position also assures the nutritional needs of the residents are met through clinical nutrition services. Essential Responsibilities Coordinates food service activities in the dining rooms Confers with staff and dietician to plan menus and related activities Oversees cleaning, maintenance, and sanitation of dining rooms and equipment and facilities and ensures that all health and safety regulations are adhered to Directs hiring, assignment, training motivation and termination of personnel Prepares work schedules and evaluates work performance of employees Assists clinical dietician in planning menus Keeps records such as amount and cost of meals served and hours worked by employees Education Requirements: Bachelors Degree and/or Culinary Arts degree preferred with completion of HACCP food service sanitation course Experience Requirements: A minimum of two (2) years of management experience; seasoned level of experience as an Executive Chef with food service management experience in a healthcare environment is preferred.
