The Dietary Manager shall be directly responsible for planning, implementing, directing and controlling the activities of the Nutrition/Food Services Department. Responsibilities: Formulates and maintains Food Service policies and procedures. Consults with supervisors and medical staff regarding functions of the department. Implementing and maintains compliance with the State, Federal and Hospital Association regulations. Working directly with Health Department to meet new regulations. Ensures that the quality, safety and appropriateness of the dietary department functions are monitored and evaluated and that appropriate actions based on findings are taken. Interviews, selects, schedules and trains employees. Evaluates employee's job performance. Attends meetings and conferences to maintain currency in dietetics and food service information and products. Establishes standardized recipes for food preparation. Follows approved hospital menus and recipes. Assures records are kept of temperatures, appearance, flavor, texture and taste of food. Reviews food costs. Develops and directs a functional cost control system. Implemented non- select menu control cost and inventory. Implements food preference visits. Prepares nutritionally balanced menus for patients including modified diets. Prepares menus for cafeteria and special functions. Selects recipes and discusses menu with cooks. Directs procedures for storage, handling and service of foodstuff. Purchases food items, expendable supplies, equipment and utensils within hospital guidelines.Qualifications Education:High School or Equivalent Experience:Desirable characteristics include at least two (2) years of supervisory experience in a hospital or medical environment. Must be able to follow directions and to perform work according to department standards independently. Must be able to function effectively under stressful conditions. I. Position Summary:
The Manager Dietary is responsible for coordinating the Dietary Services on a daily basis. Adheres to National Patient Safety Goals as appropriate based on the level of patient contact this position requires.

The Manager Dietary responsibilities include, but are not limited to, the following:
* Manages department staff, including hiring, training, evaluating performance and competency, and conducting disciplinary/counseling sessions as needed
* Provides appropriate nutritional assessments, plans, implements and evaluates nutritional care provided for patients
* Estimates food requirements and controls serving portions, eliminating waste and leftovers
* Checks requests for special foods and if food is acceptable in diet plan, and assists in patient tray preparation to ensure adherence to diet instructions
* Maintains financial data and prepares management reports for departments budget
* Assists in maintaining effective communication and public relations, inter and intra departmentally
* Prepares meals appropriate to the shift worked, using standardized recipes
* Conducts tray assessments and meal rounds identifying deficiencies of any diet that is not in compliance with the recommended dietary allowances
III. Accountability:
The Manager Dietary reports to the Chief Financial Officer.
IV. Qualifications:
* High School diploma or equivalent
* Certified Dietary Manager (CDM) preferred
* 1 year experience in institutional food preparation
